Mi Desayuno Alegre/My Happy Breakfast





Hola hermosos (as),

Desde que les compartí varias fotos con recetas que he preparado recientemente, muchas personas me han pedido que las comparta.  Y pues, ¡sus deseos son órdenes!  Hoy les comparto una receta que me llena de felicidad todas las mañanas.  Es un desayuno llenito de ingredientes naturales y saludables, y lo mejor es que te lo puedes llevar contigo al trabajo, a la escuela, a la universidad, o a cualquier destino.  Es fácil de preparar, eso si, deben hacerlo varias horas antes de consumirlo o la noche antes y dejarlo en el refrigerador para que repose y coja todos los sabores y gustitos de los ingredientes.

También quiero compartir con mis amigos que residen en Puerto Rico donde pueden conseguir los productos orgánicos que han visto en las fotos que he subido a mi cuenta de Instagram (Síganme @dianamargarita1) y Facebook.  Al final de esta entrada les dejo la información para que apoyen nuestra agricultura local y se mantengan bien saludables, comiendo fresco y natural.

Today I will share my go to happy breakfast recipe.  This breakfast recipe is full of healthy ingredients.  Not only that, it is also easy to prep and you can take it anywhere--your job, school, college...  I recommend you prepare it the night before and let it chill in the fridge overnight.  But its ok, if you don't have time at night.  You can also prepare it, and chill it for a bit while you get ready for your day. Its best to do it overnight so that the ingredients and flavors blend in nicely.


Also, if you find yourself in Puerto Rico and are looking for healthy dining options, I am sharing information below on where you can buy fresh, and organic produce in the island, as well as spots for dining.



Ingredientes/Ingredients:

Una Taza Grande o un Recipiente de Cristal
A Large Mug or Glass Jar





1/2 Taza de Avena
1/2 Cup of Oatmeal




2 Cucharadas de Sopa de Yogur Griego (con bajo por ciento de grasa o sin grasa)
2 Soup Spoons of Low-Fat or Non-Fat Greek Yoghurt 




3/4 Taza de Leche de Almendras (a mi me gusta natural, pero igual pueden comprar la leche de almendras con sabor a vainilla)

3/4 cup of Almond Milk (I prefer the original kind, but you can buy flavored almond milk, preferably vanilla)




Nueces y Pasas (o moras deshidratas) al gusto
Nuts and Raisins (as much as you desire)





1 1/2 Cucharadas de Semillas de Chia 
1 1/2 Tablespoons of Chia Seeds




1 Guineo o Plátano o  4 Fresas Picadas
1 banana or 4 strawberries chopped



1 Cucharadita de Miel (o mas si te gusta bien dulce)
1 Teaspoon of Honey ( or more if you like sweets)




1 Cucharadita de Mantequilla de Almendras o Maní (opcional) 
1 Teaspoon of Almond or Peanut Butter (optional)

Procedimiento:

Pon todos los ingredientes en el frasco de cristal, y mézclalos con una cuchara ligeramente.  Agita el frasco un poco para que se mezclen bien todos los ingredientes y sabores.  Pon el frasco en el refrigerador la noche antes de tomártelo.  O si desayunas tarde, lo puedes hacer temprano en la mañana y ponerlo en el refrigerador 1-2 horas.   

Procedure:

Combine all the ingredients in the glass jar and blend them lightly using a spoon.  You can also shake the jar once its sealed so that the ingredients and flavors mix well.  Put the jar in your fridge and let it chill overnight.  If you have your breakfast later during the day, you can do this recipe early in the morning, and let it chill in the fridge for 1-2 hour.

Styling Transitions...




Hi loves,


Its been 2 weeks since I move to Puerto Rico and I can't be any happier.  If there is any word that describes what I have been feeling since I moved back is the word freedom.  Freedom of spirit.  There is something about reconnecting with the soil that birthed you, your nation, your neighborhood, your home, your family, that makes you feel protected, nurtured, and loved.  That is of course, if you have had the privilege and blessing of growing up in a place free of turmoils, and wars of all sorts.  I have had the privilege of growing up in a island where your senses are overly stimulated by so much natural beauty.

I love waking up to the smell of fresh grass, trees, and flowers.  I specially love opening my bedroom windows in the morning and seeing a massive tree full of tiny purple flowers, of which branches almost touch my bedroom windows.  I feel truly happy when I hear all sorts of birds singing all day long, and when I go to my local CSA to pick up my vegetables and fruits for the week, and I am greeted with warm hugs and kisses by the staff.  I feel truly connected when I run every evening in  my neighborhood and I can see my neighbors seating in their porches smiling or saying hi to you.  I am madly in love with this boiling heat that makes us Puerto Ricans passionate, driven, tight, close...  And let's not forget the radiant blue and green sparkle our beaches exude.  It brings up all sorts of feelings: nostalgia, happiness, serenity... Yep, that is the place I was born and grew up in, and I am very blessed and privileged to be back here.

So its being a time of transitions in all aspects, including redecorating old spaces to reflect my current lifestyle.  I started several months ago redecorating my old bedroom to reflect my current emotional state! And I am happily sharing the almost-finished product. There are still things to be added, but this is pretty much it.  I will share additional details I continue adding later on. Its full of whimsical, old, and gilded details, and I hope you find inspiration to redecorate your old spaces.  I did mine with little money, and repurposed old furniture/accents.  Its all about letting your creative juices flow!

As promised I will be sharing a few recipes I have been working on since I arrived home, Puerto Rico.  Today I will share three recipes to drink on those hot summer days.  All the recipes have a common ingredient: FRUITS, all grown in organic and ecological farms in Puerto Rico.  I hope you enjoy them and they keep you cool and fresh this summer...

Como les prometí voy a estar compartiendo varias recetas que he estado preparando desde que llegué a mi bella isla del encanto.  Amo este lugar, y mi inspiración culinaria se activa instintivamente en este lugar tan lleno de frutos y vegetales deliciosos.  Las recetas que les voy a compartir hoy son de bebidas refrescantes hechas con frutas orgánicas y cosechadas en fincas orgánicas y ecológicas de Puerto Rico.  Espero que las disfruten tanto como yo y que se mantengan bien refrescados este verano cuando las tomen!  Si viven en Puerto Rico, apoyen la industria agraria local y compren productos hechos aquí.  En otra entrada del blog les cuento donde pueden conseguir estos frutitos y vegetalitos deliciosos!

RECIPES/RECETAS

Papaya-Banana Smoothie

This drink is not as refreshing as the other two recipes, as its more creamy and dense.  But it can be quite refreshing if you put plenty of ice or refrigerate it for 30 minutes after you prepare it.

Ingredients:

1 ripe banana peeled and sliced (2 if bananas are small)

1 cup ripe papaya seeded, diced, and chopped

1/4 cup non-fat greek or natural yogurt

Ice cubes as much as desired

1/2 cup water or milk (or more if you are having difficulty blending them)

Honey as much as you desire

Oatmeal or granola for topping

1. Combine the banana, papaya, yogurt water/milk, honey, and ice in a blender.  Blend until it becomes smooth.  Pour into a glass container and add the granola or oatmeal on top.  Eat the granola or oatmeal with a spoon and drink the smoothie with a straw.

2.  For the two-color effect you will have to blend the fruits separately.  First, blend the bananas combining 1/4 water or milk (or more if needed), and half the yogurt.  Blend until smooth. As for the honey, you can pour  a little bit of it into each mixture. After you pour the banana smoothie into a glass container, wash and clean, and proceed to blend the papaya using the same procedure as with the bananas.  Once the papaya is blended, pour it into the same glass container as the bananas, and VOILA, you have a two-layered smoothie!


Batida de Papaya-Guineo (Plátano, banano, o como le llamen sus bellos países)

Esta batida es deliciosa, y aunque menos refrescante que las otras recetas de bebidas que les voy a compartir, puede ser bien refrescante si le echan mucho hielo o la refrigeran luego de terminada.

Ingredientes:

1 guineo maduro pelado y cortado en rodajas (añada otro guineo si son pequeños)

1 taza de papaya madura, desgranada, y cortada en cubitos

1/4 taza de yogur griego o natural sin grasa

Hielo al gusto

1/2 taza de hielo o leche (agregue más cantidad si está muy espesa)

Miel al gusto

Granola o avena para adornar ( y comer también!)

1. Mezcle el guineo, papaya, yogur agua/leche, miel, y el hielo en una licuadora.  Licuar hasta lograr una consistencia suave.  Eche la mezcla en un recipiente de cristal.  Cubra la mezcla con granola o avena.  Utilize una cuchara para comerse la granola o avena y la batida tómela con sorbeto (o popote, pajita, cañita, sorbete).

2.  Para lograr el efecto de dos capas que aparece en la foto debe licuar las frutas por separado.  Primero debe licuar los guineos combinando 1/4 de taza de leche o agua, y la mitad del yogur.  Puede poner un poquito de miel en cada una de las mezclas.  Licuar hasta lograr una consistencia suave.  Eche los guineos en un recipiente de cristal.  Enjuague el contenedor y proceda a licuar la papaya siguiendo el mismo proceso que con los guineos.  Una vez la papaya esté licuada, viértalo en el mismo recipiente de cristal, y échele la granola o la avena.  Listo para disfrutar su batida de dos colores!



             
                                                 

WATERMELON-LIME-MINT COOLER

In Mexico, they called this drink "aguas frescas".  The word frescas means refreshing in English, and the following two recipes will surely refresh you!  They are made with refreshing fruits: pineapple & and watermelon, and refreshing herbs: basil & mint.



Ingredients:

1. Seeded, peeled, and diced watermelon.  There is not a specific a mount of watermelon you need to use.  The amount will depend on the size of the container and your taste.  I like putting a moderate amount about 10 small-medium cubes of watermelon once their diced.

2. 1 Lime or Lemon in slices

2.  Ice cubes
3. Filtered water
4. Mint
5. Brown Sugar or natural sweetener (optional)

Place the diced watermelon into a glass container (mason jar or any glass container you have).  Use a muddler to crush the watermelon. Crush until fruit becomes liquified (or when you start seeing the fruit juice).  Do the same with the limes or lemons. Add about 3 slices and crush them.  If you don't like how they look crushed you can take them out of the container, as we only need their juice.  Place a mint leave and use the muddler to crush it a bit, and bring the flavor out.  Proceed to put the ice cubes (as many as you wish, I like putting a lot!).  Add more of the diced watermelon (4-5 cubes), as well as the lime or lemon slices (2-3 slices) for garnish.  Plus the fruits look really cute when they are floating!  Add the filtered water.  To finish, add the brown sugar or natural sweetener if you don't like the taste of water too much.  Drink and enjoy!


Agua fresca de Melón, Lima y Menta

Las próximas dos recetas contienen los frutos predilectos del verano: la piña y el melón o sandía.  Además de contener un ingrediente esencial en los veranos: AGUA! Para resaltar los sabores de las frutas y darle ese toque refrescante le añadí menta y albahaca.  Sus gargantas se lo van a agradecer este verano cuando prueben estas ricas bebidas!

Ingredientes:

1. Melón o sandía desgranada y cortada en cubitos.  Puede echarle la cantidad de melón o sandía que desee.  La cantidad va a depender del tamaño del recipiente, y su preferencia por echarle poco o mucho.  A mi me gusta ponerle una cantidad moderada de algunos 10 cubitos pequeños-medianos.

2.  1 Lima o Limón en rodajas
3. Agua destilada
4. Menta
5. Hielo
6. Azúcar morena o endulzante natural y sin calorías (opcional)

Echa los cubitos de melón o sandía en un recipiente de cristal.  Utilice una "mano" o aplastador de frutas (en buen criollo, el utensilio que usa con el mortero o pilón) para machacar el melón o sandía y sacarle un poco de jugo a la fruta. Haga lo mismo con  el limón o lima. Si no le gusta como se ve el limón o la lima una vez machacadas las puede quitar del recipiente.  Luego ponga una hojita de menta en la mezcla machacada y use el aplastador de frutas para machacar la hojita y que así libere su fragancia. Prosiga a echar unos cubitos y rodajas de melón y lima o limón sin machacar como para decorar y que se vean las frutitas.  Luego agregue los hielos (cuantos desee, a mi me gusta poner muchos!).  Añada agua destilada.  Para terminar, agregue azúcar morena o endulzante natural sin calorías si no le gusta mucho el sabor del agua.









PINEAPPLE-BASIL COOLER

I had an excess of basil in my kitchen from my weekly CSA basket.  I decided to try this flavorful and fragrant leave in my drink.  I thought it would complement nicely the sweet and tangy taste of pineapples.  I promise you, its one summer bursting concoction!





Ingredients:

1. Peeled, and diced pineapple in small cubes.  There is not a specific a mount of pineapple you need to use.  The amount will depend on the size of the container and your taste.  I like putting a moderate amount about 5-6 small-medium cubes of pineapple once their diced.

2.  Ice cubes
3. Filtered water
4. Basil
5. Brown Sugar or natural sweetener (optional)

Place the diced pineapple into a glass container (mason jar or any glass container you have).  Use a muddler to crush the pineapple. Crush until fruit becomes loose and you see some its natural juice.  Place a basil leave and use the muddler to crush it a bit, and bring the flavor out.  Proceed to put the ice cubes (as many as you wish, I like putting a lot!).  Add a few more diced cubes of pineapple (4-5 cubes).  Add the filtered water.  To finish, add the sugar or natural sweetener if you don't like the taste of water too much.  Drink and enjoy!

Agua Fresca de Piña y Albahaca 

Nunca había utilizado la albahaca en una bebida.  Pero como me dieron mucha albahaca en mi cesta semanal de un programa local de agricultura apoyada por la comunidad (CSA en inglés), pues me tocó inventar en la cocina.  Creo que combinar la albahaca con la piña fue una gran idea, pues el sabor agridulce de la piña va perfecto con el sabor picantito de la albahaca.

Ingredientes:

1. Piña cortada en cubitos.  Puede echarle la cantidad de piña que desee.  La cantidad va a depender del tamaño del recipiente, y su preferencia por echarle poco o mucho.  A mi me gusta ponerle una cantidad pequeña de algunos 5-6 cubitos por el sabor de la piña.

2.  Hielo
3. Agua destilada
4. Albahaca
5. Azúcar morena o endulzante natural y sin calorías (opcional)

Echa los cubitos de piña en un recipiente de cristal.  Utilice una "mano" o aplastador de frutas (en buen criollo, el utensilio que usa con el mortero o pilón para machacar la piña y sacarle un poco de jugo a la fruta.  Ponga una hojita de albahaca en la mezcla machacada y use el aplastador de frutas para machacar la hojita y que así libere su fragancia.  Prosiga a echar los hielos (cuantos desee, a mi me gusta poner muchos!).  Añada agua destilada.  Para terminar, agregue azúcar morena o endulzante natural sin calorías si no te gusta mucho el sabor del agua.

DYI Project: Vintage-like Mason Jars// DYI Project: Pintando Frascos Mason con Look Antiguo

It's been a while since I last blogged.  I have been busy with several professional projects.  I have missed blogging so much, mostly because I love sharing my ideas with you, and I also find it therapeutic.  Since I spend a few days at home in Puerto Rico, it seemed the perfect time to write a post.  I went there to pilot test (don't worry, some fancy research lingo) the instrument I will be using for my dissertation study, which will kickstart this summer, some networking meetings, and to start redecorating my bedroom.  In between pilot testing and meetings, I took some time to create some decor pieces for a beautiful antique desk I have in my bedroom.  I repurposed two old mason jars and gave them a vintage-like look.  I would love to share with you the 411 on how to turn your old jars into beautiful art pieces.  The best part is that this art project was easy breezy, cheap, and very relaxing.  You can also make this into a fun activity to do with your friends, family, and boyfriends/girlfiends. Trust me when I say you ALL CAN MAKE THIS, because I am the least handy and crafty person in the world!

Ya llevo un rato sin escribirles.  No es por falta de interes, si no mas bien de tiempo.  He estado ocupada con varios proyectos profesionales y personales y pues por eso mi ausencia.  Pero ya me hacia mucha falta escribirles y compartirles mis ideas.  Ahora que estuve de visita en Puerto Rico (mi dulce hogar) me pareció que era el momento ideal para escribirles.  Estuve allá porque estaba llevando a cabo la prueba piloto (lenguaje muy tecnico... ni se preocupen!) del instrumento que voy a utilizar en mi disertación doctoral, y por que vengo a entrevistarme con varios investigadores y ver si en un futuro puedo colaborar profesionalmente con ellos.  Tambien estoy aprovechando un poquito del tiempo libre aqui para empezar a redecorar mi habitación.   En ese tiempo libre busque algunos de mi frascos de Mason viejitos para reutilizarlos como accesorios en un escritorio antiguo que tengo en mi habitación.  La idea fue darle a estos frascos un toque antiguo para que fuera a tono con la decoración de la habitación.   Fue muy divertido hacerlos, ademas de muy sencillito y muy barato.  Me parece que es una actividad muy divertida que puedes hacer para relajarte, ya sea con tus amigos, novios(as), o familia... y por supuesto tambien la puedes hacer en completa soledad con una musiquita de fondo para ambientar la cosa.  

Abajo les comparto paso a paso como reutilizar estos frascos (Las instrucciones están debajo de las instrucciones en ingles).  Espero que lo disfruten!

MATERIALS:


1. Mason jars
2. Rubbing Alcohol
3. Handi Wipes
2. Acrylic paint in the color you want to paint your jar (I bought mine in the crafts section of Michael's)
3. A small soft bristle brush (You can also find these in any arts & craft stores)
4. Small/Medium Sand Paper
5. Clear Matte Sealer (I bought mine at Home Depot, but Michael's and other arts & crafts stores carry them.  
6. Cups or jars to put the paints
7. Newspapers to cover the area where you will be painting



STEP 1:  CLEAN YOUR JARS

If your jars are greasy I will recommend using rubbing alcohol to clean them.  You can use a handi wipe to do this.  After you clean them with alcohol, wash them with soap and warm water.  You can wash them with lukewarm or hot water.  If your jars are new, you can skip the alcohol step, and just wash them.  Dry them really really well, otherwise the paint will not adhere well.  









STEP 2. PAINT THEM (2 coats)

I used DecoArt Americana Acrylic Paints in Pistachio Mint and Baby Blue colors.  I used 2 coats for my jars, but this will vary depending on the paint brand you use.  It is also important to wait about 20 minutes before you give the jar the second coat, otherwise the first coat may peel off and it gives it a lumpy effect.  If after the two coats you have  minor spots missing, you can use the corner of the brush to gently cover those.  





STEP 3. DRY THEM (BE PATIENT!)  

Again, each paint brand varies in terms of the time it takes for a product to dry.  It also depends on whether you are in warm or cold weather.  It generally dries faster in warmer climates.  I would say, as a rule of thumb, let your jars dry for at least 24 hours.  Better to be safe than sorry!

STEP 4. SANDING (FOR VINTAGE EFFECT)

After your jars are completely dry use the sanding paper to create a vintage effect.  Because the jars are small, cut a square of sanding paper to be able to sand the font in the front and in the areas around the lid and bottom parts (See the pictures below).  You may have to fold the square in half for some of the font to facilitate the sanding process.  If your paper is too big, you may scrape off other areas of the jar that you do not wish to sand.  






Step 5. SEAL THEM

This is the final step.  After you sand them, you need to seal them, especially if you plan to put items inside the jars.  This will protect them, and make the painting last longer.  It also gives it a polished finish.  Make sure you buy a MATTE SEALER and NOT a GLOSSY or SHINY one.  Also make sure its CLEAR. See the picture below for the one I use.  You can find this at Michael's, Home Depot, or any paint/arts & crafts stores.  Make sure you use this product in a well ventilated area and cover the surface with plenty of newspapers.  Once you do this, you can go ahead and spray your jar evenly from left to right, making sure you cover all the jar.  You may have to spray your jar more than 1 time to ensure full coverage.  Drying times vary, but generally is dry to the touch in 20 minutes, and fully in 24 hours.







And here is the finished product... Ta Da!!!!!!!

Materiales:

1. Frascos de cristal Mason (Estos frascos popularmente se le llaman Mason, pero vienen de diferentes marcas, como Kerr)
2.  Alcohol quirúrgico (y si eres puertorriqueño Alcolhado)
3. Handi wipes (toallitas/balletas para limpiar enseres, autos, etc.)
4. Pintura de acrilico (De venta en Michael's y tiendas de manualidades)
5. Brochas de pintar pequenas
6. Papel de lija (De venta en Michael's y tiendas de manualidades)
7. Sellador en aerosol (De venta en Michael's y tiendas de manualidades)
8. Envases para poner las pinturas
9. Papel de periódico para cubrir el area donde vas a trabajar


Paso 1. LIMPIAR LOS FRASCOS

Asegurate de que tus frascos esten bien limpios antes de empezar a trabajar con ellos.  Si son nuevos lavalos con jabón y agua caliente.  Si los has usado anteriormente, primero límpialos con alcohol quirúrgico, y luego lavalos con jabón y agua caliente.  Secalos super bien, porque si están mojados o húmedos va a danar la pintura.

Paso 2. PINTARLAS

Una vez esten bien secos los frascos, pon tu(s) pintura(s) en un recipiente y comienza a pintar.  El numero de capas de pintura que hay que darle a los frascos va a depender de la marca de las pinturas, así como de la temperatura en el lugar donde te encuentres pintando los frascos.  Yo utilize pinturas acrílicas de la marca DecoArt Americana en los colores pistachio mint y baby blue y tuve que darle dos capas de pintura.

Paso 3. SECAR LOS FRASCOS (TEN PACIENCIA!)

El tiempo que tardan los frascos en secarse tambien depende de la marca de la pintura y de la temperatura en el lugar donde te encuentres pintando los frascos.  Usualmente en la etiqueta de la pintura te dice el tiempo que debes dejar que se seque.  Como regla general, es bueno dejarlos secando 12-24 horas.

Paso 4. LIJAR LOS FRASCOS (PARA ACABADO ANTIGUO)

Para darle un look antiguo a los frascos vamos a utilizar el papel de lija.  Primero, recorta un cuadrito pequeño del papel de lija para que se mas facil manejarlo con tus dedos.  Luego vas a pasar el papel de lija por las letras que aparecen en la parte frontal, así como en la parte superior del frasco (donde se pone la tapa).  Tambien puedes lijar un poquito la parte de abajo del frasco (Mira las fotos arriba).  Cuando vayas a lijar las letras es posible que tengas que doblar el cuadrito de papel a la mitad y utilizar la punta del papel de lija para lijar.  Si utilizas todo el cuadrito, puede ser que lijes areas que no quieres lijar.  Juega con el papel de lija según el tamaño de tus frascos, y de tus dedos y manos.

Paso 5. SELLAR LOS FRASCOS

Este es el ultimo paso.  Utiliza un sellador en aerosol y asegurate que el sellador sea matte transparante (Mira las fotos arriba para ver el sellador que yo utilize).  Cada sellador tiene en la etiqueta instrucciones de como utilizarlo.  Lo mas importante es que utilizes este producto en un area ventilada y cubras la superficie con papel de periódico.   Rocie el sellador de forma pareja de izquierda a derecha hasta que cubras todo el frasco.  Puede ser que tengas que rociar el frasco mas de una vez para cubrir aquellas areas que no cubriste la primera vez.  El tiempo que se tarda en secar varia.  Pero por lo general se seca al tacto en 20 minutos, y por completo en 24 horas.
